Spicy Delicata Squash + Fruity Quinoa Stuffing

Roasted delicata squash boats are basted with a spicy sauce and stuffed with a fruity quinoa pilaf. This richly flavored vegan and gluten-free dish is a perfect side dish (think Thanksgiving!) or a protein-packed main dish all through the fall.

Ingredients

  • 1 cup cooked quinoa
  • 1 tablespoon minced chipotles in adobo sauce
  • 1 tablespoon maple syrup
  • teaspoon kosher salt
  • 2 Delicata squash halved lengthwise with seeds and pulp removed
  • 1 cup apple cider
  • 1 apple peeled, cored and chopped into small chunks
  • 1 tablespoon finely chopped dried apricots
  • 2 tablespoons dried cranberries

Instructions

  • Preheat the oven to 425˚ F. Line a baking sheet with parchment paper.
  • In a small bowl, whisk together the minced chipotle peppers in adobo sauce and maple syrup.
  • Lay each delicata squash half on the prepared baking sheet with the cut sides facing up. Generously baste all of the cut and hollowed out surfaces of the cut squash with most of the sauce.
    Roast for 15 minutes.
    Remove the squash and baste with the remaining sauce. Roast for another 10 minutes or until tender.
    Air Fryer Tip: Roast the basted squash in a 400˚F air fryer for 10 minutes. Check for doneness, baste with the remaining sauce if needed, and air fry for another 5 minutes.
  • In a small pot, bring the apple cider to a simmer. Add the apple pieces, along with the dried fruit. Simmer until the cider is reduced by half, about 15 minutes. Strain, retaining the reduced apple cider.
  • Combine the cooked quinoa with the strained fruit and toss. Add a couple of tablespoons of the reduced apple cider, or to taste.
    Spoon the quinoa and fruit mixture over the roasted Delicata squash boats.
  • Serve warm.
