Fire Roasted Tomatoes Appetizer with Feta Cheese
This fabulous roasted tomatoes appetizer is barely a recipe, and gets raves at parties. Fire roast cherry tomatoes under the broiler or in the air fryer, toss with fresh herbs and serve with slices of feta cheese stacked on small crackers. Roast the tomatoes ahead, if that works better for your busy schedule.

- 1 cup freshly fire roasted tomatoes (not canned!)
- 1 tablespoon thinly sliced basil leaves
- ½ cup sliced feta cheese sliced from a block
- 20 small crackers I use Mary's Gone Crackers
Make the fire roasted tomatoes using the recipe linked in the Ingredients, above. Stir in the thinly sliced basil.
Slice a block of feta cheese into ⅛" thick slices and stack on the crackers.
Spoon the roasted tomatoes over the feta cheese.
