    What to Eat in November

    November brings us all manner of winter squash from butternut to acorn squash and pumpkins. Here are some ideas of what to eat in November that focus on five foods: butternut squash, Brussels sprouts, cabbage, delicata squash, and apples.

    November bring us Thanksgiving and the annual hunt for dishes to make for the feast. Many of these dishes can grace your table this year, but they're also delicious all month long. There's no reason to wait until the end of the month to enjoy them.

    Here are 5 foods to take advantage of this month. Each type of produce has two recipes to check out, or click the link at the bottom of each section to find more recipes for that particular fruit or vegetable.

    BUTTERNUT SQUASH

    Pomegranate Hasselback Butternut Squash with Sage

    This pomegranate-glazed hasselbacked butternut squash is a delicious, gorgeous main course or side dish for your Thanksgiving holiday table, Christmas dinner, or any special dinner. Butternut squash is hasselbacked, basted with a pomegranate glaze, and finished with crumbled sage leaves fried in brown butter.

    Step-by-step instructions to hasselback squash are included, with photos for each step. Once you do it, you'll hasselback potatoes and other veggies too, because it's easy and speeds up the roasting time.

    Butternut Squash Steaks with Roasted Garlic

    These butternut squash steaks make a hearty main dish for fall dinners and are easy to make from the neck of any butternut squash. These steaks were roasted in the air fryer with sage-butter, and topped with a smear of roasted garlic that was mashed into a paste, but you can roast the steaks in the oven too.

    BRUSSELS SPROUTS

    Air Fryer Balsamic Brussels Sprouts with Quinoa

    For this Brussels sprouts main or side dish, are sliced in half, roasted in the air fryer with a little olive oil and balsamic vinegar, and tossed with dried cherries, quinoa and caramelized onions. The dish is finished in a creamy mustard glaze. Much of this dish can be made ahead and I top leftovers with a fried egg for a hearty breakfast!

    This warm Brussels sprouts salad is partnered with caramelized onions and tossed in a maple syrup vinaigrette and topped with (optional) garlic breadcrumbs.

    CABBAGE

    Oven Roasted or Grilled Garlic Cabbage Steaks

    Roasting vegetables brings out their best flavors. And when you add a little garlic, you have the perfect side dish. These crispy roasted cabbage steaks have crispy edges and are tender in the middle. They're infused with spices while they roast plus garlic for a delicious side dish.

    This is not your average braised cabbage recipe. It's a movie star with French roots, with butter, onion, white wine, mustard and a little cream. My best advice is to double whatever you think you'll need. And it still might not be enough. It's that good.

    This vegetarian stuffed squash recipe fills roasted delicata squash boats with quinoa, tofu, apples, raisins, spinach and Parmesan cheese. It's the perfect weeknight dinner and dinner party entree, or a delicious side dish for the meat eaters at the table.
