    What to Cook in February

    You may think there aren't many seasonal veggies available in the winter months, but you would be wrong. It's a perfect time for root vegetables, some greens, and veggies in the cruciferous family.

    📆 Foods to Love in February

    Tropical and citrus fruits. Citrus season is still here, so take advantage of the variety available now. Even citrus like navel oranges are a little sweeter now since they're in season.

    Mushrooms. Mushrooms thrive in the winter months and is a perfect time to find maitake, shiitake, enoki, and oyster mushrooms now.

    Cruciferous vegetables. These are some of the most nutritional foods on the planet and include broccoli, Brussels sprouts, cauliflower, kale, and cabbage.

    Root vegetables. Root vegetables are more flavorful when the temps drop. For the freshest root veggies, look for ones with their stalks and leaves still attached. Note to self: stay away from prepackaged. There's no way of knowing how old they are.

    🥕 Carrots

    🍠 Sweet Potatoes

    Easy Sweet Potato and Black Bean Tacos (GF with corn tortillas, vegan without queso fresco topping)

    🍄‍🟫 Mushrooms

    I often just have a salad and some French bread with this soup, but these citrus roasted carrots would be great with it since there are carrots in the soup already.

    🥔 Potatoes

    🏈 Super Bowl Eats

    February in the States is also about the Super Bowl football game. It's practically a holiday here. My team didn't make it this year, but we'll be watching nonetheless. Here are some great game day eats to enjoy if you're watching along.

    Slow Cooker Black Bean Soup (GF, vegan)

    Make Jiffy Mexican cornbread to serve with this soup.

    Texas Trash Dip (GF)

    Pimento Cheese (GF)

    Round up of appetizers, cocktails, cider, breads and condiments you can make for your vegetarian Thanksgiving. This collection ends with some fabulous desserts, because dessert for Thanksgiving is mandatory.

    Loaded Smashed Potatoes (GF)

    Loaded, smashed and roasted potatoes with melted cheese, green onions, sour cream and dried red peppers.

    🥖 Fun Baking Project

    Finally, here's a fun baking project to try this month. When I was in culinary school, homemade yeasted breads were my favorite thing to make.

    This coming month I'll be sharing recipes for some favorite homemade breads: focaccia and fougasse (the French version of focaccia).

    Aglio e Olio Bread

    Two pizza bread rounds seasoned aglio (garlic) and olio (olive oil) style. One round has a piece torn from it.
