    Weekly Meal Plan - December Week 2

    This vegetarian meal plan for the upcoming week offers recipes with butternut squash including butternut squash steaks, comforting soups, and savory pancakes made with chickpea flour and spinach.

    We're coming into summer here in the mountains, which means it's summer everywhere. And I'm craving summer food. Here's a menu plan for the week, and in the details are suggested side dishes.

    VEGETARIAN MEAL PLAN

    V = Vegan; GF = Gluten Free; DF = Dairy Free

    MONDAY:  Vegetable Rice Soup with Chickpeas (GF)

    TUESDAY:  Roasted Butternut Squash and Red Onions with Tahini (V, DF, GF)

    WEDNESDAY:  Chickpea Flour Pancakes with Spinach and Scallions (V, DF, GF)

    THURSDAY:  Butternut Squash Steaks with Roasted Garlic (V, DF, GF)

    FRIDAY:  Tuscan Kale and White Bean Soup (V, DF, GF)

    M O N D A Y

    Vegetable Rice Soup with Chickpeas

    This vegetable rice soup never fails to make me feel good. It starts with a foundation of onion, celery, carrot, and Serrano pepper. Next comes broth, rice, potatoes and herbs. It's finished with partially smashed chickpeas to add some vegetable protein and creaminess (without the cream) and a secret ingredient. It's a total comfort soup.

    This roasted butternut squash and red onions recipe is packed with flavor and is a perfect weeknight sheet pan main dish or simplified for a side dish. This hearty dish is both vegan and gluten-free.

    Mini Chickpea Pancakes with Spinach

    These mini chickpea pancakes are made with chickpea flour, rosemary, scallions, spinach, and lemon for a delicious appetizer, lunch, or dinner. They're made thicker by the addition of a little baking powder. Instructions include making this pancake as small thick pancakes.

    Butternut Squash Steaks with Roasted Garlic

    These butternut squash steaks make a hearty main dish for fall and winter dinners, and are easy to make from the neck of any butternut squash. These steaks were roasted in the air fryer with sage-butter, and topped with a smear of roasted garlic mashed into a paste.


    F R I D A Y

    White Bean Soup with Tuscan Kale and Tomatoes

    This is a rustic white bean soup, made smoky from dried chipotle peppers that are added to the soup while it simmers. Kale is added at the end, but baby spinach works just as well if kale isn't your thing.
