    Weekly Meal Plan - August Week 1

    This week's vegetarian meal plan includes soups that celebrate the summer harvest, a quinoa-zucchini-tomato salad and a cobbler-style zucchini casserole topped with cornbread.

    This summer vegetarian meal plan for the week ahead celebrates the wide array of produce that's in season right now.

    VEGETARIAN MEAL PLAN

    V = Vegan; GF = Gluten Free; DF = Dairy Free

    MONDAY:  Summer Farro Soup with Vegetables and White Beans (Easily V, DF)

    TUESDAY:  Mac 'n Cheese Impossible Pie

    WEDNESDAY:  Zucchini Cobbler with Cornbread Topping

    THURSDAY:  Quinoa Zucchini Salad with Tomatoes, Dill and Lemon (V, GF, DF)

    FRIDAY:  Easy Roasted Red Pepper and Tomato Soup (V, GF, DF)

    PARTY APPETIZER: Fire Roasted Tomatoes Appetizer with Feta Cheese (GF)

    M O N D A Y

    Summer Farro Soup with Vegetables and White Beans

    This summer farro soup is made with fresh summer vegetables and cannellini beans, and topped with grated Swiss cheese. Omit the cheese to make this a vegan dish.

    Mac 'n Cheese Impossible Pie

    Impossible Pies were all the rage in the '70's. They're so easy, and now you can make macaroni and cheese without cooking the pasta first. Impossibly, so it seems, this Mac 'n Cheese Impossible Pie forms its own crust while it bakes.

    This zucchini cobbler with corn, yellow beans, and tomatoes is topped with cornbread batter, and then all baked together for a dish the whole family will love.

    Quinoa Zucchini Salad with Tomatoes, Dill and Lemon

    This quick zucchini quinoa salad is an excellent vegan main meal or a great side dish option. If you have cooked quinoa on hand, it can be prepared in under 20 minutes.

    This roasted red pepper and tomato soup combines the best of a tomato basil soup with a roasted red pepper soup, for an incredibly rich flavor that far surpasses anything in a can.

    Fire Roasted Tomatoes Appetizer with Feta Cheese

    This fabulous roasted tomatoes appetizer is barely a recipe and gets raves at parties. Roast the tomatoes ahead, if that works better for your busy schedule. Fire roast your own tomatoes either under the broiler or in the air fryer, toss with fresh herbs, and serve with feta cheese and crackers.
