    Vegetarian Recipes for Passover

    A collection of vegetarian recipes for Passover this week ranging from soups and main dishes to sides and a dessert.

    The Passover Jewish holiday is in many ways all about food beginning with a seder. But it also carries some food restrictions that honor the biblical time in which this event took place: the exodus.

    The core restriction is around eating any leavened bread. It's linked to the Israelites' hasty departure from Egypt which left no time for their bread to rise. All grains are lumped into this restriction including barley and farro. Instead, observant Jews eat matzah, which is unleavened.

    Rice, beans (legumes), and corn were included in the restriction because they were often stored with grains, although this restriction has loosened over time.

    Dairy products can be a problem if they have additives that are forbidden. Therefore, observant Jews aim for Passover certified dairy products during Passover.

     Below are some vegetarian dishes for Passover that you may want to make this week, whether or not you are Jewish.

    Soups

    This is a great soup to make ahead since it needs a little time to chill in the refrigerator.

    This vegan soup is full of flavors with carrots, ginger, garlic, coconut milk, and green curry paste.

    Main Dishes

    What makes this dish incredibly special is adding a little harissa and dill weed to the tahini sauce, and finishing the dish with dates, fresh dill and fresh mint.

    This veggie scampi features steamed cauliflower tossed in a sauce made with a few ingredients you likely have on hand. I sometimes add pasta, but just eliminate it for Passover. If you want to finish it with a few gratings of cheese, be sure to use one that's approved for use during Passover.

    Sweet Potato Cakes

    These easy sweet potato cakes are perfect for lunch, dinner or even an appetizer but you'll need to replace the bread crumbs with matzo meal for Passover.

    These thick steaks are easy to make from the neck of any butternut squash. Roast them in the air fryer with sage-butter, and top with a smear of roasted garlic mashed into a paste. Be sure to use a Passover certified butter or substitute extra-virgin olive oil.

    The meal prep for this easy Passover dish is very quick if you have a food processor for grating the potatoes and onion.

    Spiced Sweet Potato Fries

    These roasted sweet potato fries are spiced up with cardamom and cinnamon and served with a 2-ingredient maple-mustard dip.

    Cabbage Steaks

    These garlicky roasted cabbage steaks have crispy edges and are tender in the middle.

    This vegan side dish of cauliflower rice is cooked with grated carrots and tossed with cilantro and lime.

    Spiralized Sweet Potatoes with Dates and Apples

    Spiralized sweet potato noodles are sauteed with apples and caramelized onions for a quick and easy dinner, especially if you purchase sweet potatoes already spiralized. Dates finish the dish off with a perfect touch of natural sweetness.

    This recipe is so simple it barely needs a recipe. And it's a wonderful way to use fresh mint.

    Condiments

    This easy apple chutney recipe with onion, ginger, orange juice, apple cider vinegar and raisins is so good, you might want to grab a spoon and just eat it from the jar.

    Strawberry Salsa

    This refreshing strawberry salsa combines the sweet flavor of strawberries and agave with savory onion, chocolate nibs, and mint. Lime juice is added tang and sharpens all the flavors. 

    Dessert / Cocktail

    Sgroppino

    Also known as sgroppino al limone, sgroppino is an Italian cocktail recipe typically served in Italy as an after-dinner cocktail and dessert. It's super easy and fast to make since you only need 3 ingredients to make it: Prosecco, vodka, and lemon sorbet.
