    Here's a vegetarian meal plan for the upcoming week, full of easy weeknight dinners that can mostly be ready in 30 minutes or less.

    MEAL PLAN

    MONDAY:  Cheesy White Bean Tomato Bake

    TUESDAY:  Vegan Creamy White Bean Soup with Kale and Lemon

    WEDNESDAY:  Warm Chickpea Feta Salad with Roasted Tomatoes

    THURSDAY:  Pan Roasted Brussels Sprouts with Eggs

    FRIDAY:  Vegetarian Hamburger Helper

    WEEKEND BONUS RECIPE: Apple Pie Bars

    M O N D A Y

    Cheesy White Bean Tomato Bake

    This cheesy white bean tomato bake is a perfect meatless meal the whole family will love. Serve it as a the main entree for a Meatless Monday vegetarian meal or as a satisfying side dish any night of the week.

    And it's so easy to make. Cannellini beans, garlic, onions, tomatoes, cheese and some Italian herbs is all you need!

    Mexican Green Spaghetti (Espagueti Verde)

    This vegan creamy white bean soup is easy to make and a perfect weeknight meal. Fresh rosemary, kale, and lemon juice are added to the soup with a pinch of red pepper flakes for a little kick.

    Warm roasted chickpea feta salad with olives, fire roasted tomatoes and arugula on a baking sheet ready to be served.

    This easy chickpea feta salad is the perfect weeknight dinner that's ready in around 20 minutes. It stars protein-packed chickpeas tossed in spices, and features cherry tomatoes and slabs of feta cheese roasted under the broiler, and briny olives.

    Low-carb, keto-friendly vegetarian dinner of pan-roasted balsamic roasted Brussels sprouts and onions topped with two soft boiled eggs. The Brussels sprouts and onions are caramelized for a fabulous umami savory flavor.
