    Here's a vegetarian meal plan for the upcoming week packed with fall dinners featuring winter squash dishes and apple hand pies.

    MONDAY:  Roasted Butternut Squash and Red Onions with Tahini

    TUESDAY:  Spicy Delicata Squash Stuffed with Fruity Quinoa

    THURSDAY:  Coconut Curried Butternut Squash Soup
