    Vegetarian Meal Plan: October Week 2

    Here's a vegetarian meal plan for the upcoming week packed with early fall dishes ranging from an easy pumpkin soup made with canned pumpkin, a spicy delicata squash salad, and butternut squash steaks.

    Most of these dinners can be made in about 30 minutes.

    MEAL PLAN

    MONDAY:  Spiced Creamy Pumpkin Soup

    TUESDAY:  Air Fryer Butternut Squash Steaks

    WEDNESDAY:  Stuffed Delicata Squash

    THURSDAY:  5-Ingredient French Onion Tart with Mushrooms

    FRIDAY:  Spicy Delicata Squash Salad

    WEEKEND JAM: Sweet and Spicy Red Pepper Jam

    DESSERT: Yogurt Cake with Pears

    M O N D A Y

    Spiced, Creamy Pumpkin Soup (with Canned Pumpkin)

    This pumpkin soup made with canned pumpkin is an easy and quick comfort soup that's perfect for busy weeknights. It's savory from finely chopped onion and sweet, thanks to a combination of maple syrup and apple cider.

    Air Fryer Butternut Squash Steaks with Roasted Garlic

    These butternut squash steaks make a hearty main dish for fall dinners and you might want to bookmark this recipe for your Thanksgiving table. These steaks were roasted in the air fryer (but you can totally use the oven) with sage-butter, and topped with a smear of roasted garlic that was mashed into a paste.

    In making this stuffed delicata squash dish, the stuffing can be made ahead, or made while the squash roasts. The best part is the skin of delicata squash is completely edible, so there's no need to peel the skin.

    Spicy Delicata Squash Salad with Kale

    For this flavor-packed delicata squash salad, spicy roasted slices of delicata squash are tossed with massaged kale, avocado and roasted pumpkin seeds. It's all dressed with a light apple cider vinaigrette.

    Homemade Sweet and Spicy Red Pepper Jam (No Pectin)

    Red peppers, tomatoes, garlic, and onions all come together in this sweet and spicy pepper jam. Add it to grilled cheese sandwiches, use as a condiment for meat (for the meat lovers in the family), or serve on an appetizer tray with a selection of cheeses and crackers.
