    Vegetarian Meal Plan: November Week 2

    Here's a November vegetarian meal plan for the upcoming week packed with fall dinners featuring butternut squash, enchiladas, lentils, and white beans.

    MEAL PLAN

    MONDAY:  Vegetarian Enchiladas with Beer

    TUESDAY:  Vegetarian Butternut Squash Casserole with Apples

    WEDNESDAY:  Middle Eastern Lentils and Rice Mujadara Recipe

    THURSDAY:  Instant Pot White Bean Soup Recipe with Tomatoes

    FRIDAY:  Curried Mac and Cheese with Cauliflower

    DESSERT: Yogurt Cake with Pears

    M O N D A Y

    Vegetarian Enchiladas with Beer

    Prep time: 20 minutes    Cook time: 20 minutes    Total time: 40 minutes

    Make ahead friendly: Make the filling ahead of time for a quick dinner.

    These vegetarian enchiladas are filled with two kinds of beans for protein, veggies, spices, and cheese. The filling is first simmered in beer and lime juice before rolled into tortillas. And they're topped with salsa and cheese just before going into the oven.

    This enchilada recipe uses salsa instead of enchilada sauce for a fresh tomato flavor.

    Vegetarian Butternut Squash Casserole with Apples

    Prep time: 20 minutes    Cook time: 45 minutes    Total time: 65 minutes

    Make ahead friendly: Make the filling ahead of time for a quick dinner or make the entire dish including baking ahead of time and just finish with the crumble under the broiler.

    This flavor-packed vegetarian butternut squash casserole includes caramelized mushrooms, shallots, and apples. It's all topped with an oat crumble mixed with a little fig jam for a perfect savory and sweet combination!

    This delicious recipe also shares shortcuts, make-ahead tips, and ways to roast butternut squash, and an option for including quinoa for a vegetarian main dish.

    Middle Eastern Lentils and Rice Mujadara Recipe

    Prep time: 10 minutes    Cook time: 30 minutes    Total time: 40 minutes

    Make ahead friendly: Make the rice, lentils and caramelized onions ahead of time, warm, assemble and serve.

    The easy lentils and rice mujadara recipe has three main ingredients: lentils, rice, and caramelized onions. A little ras el hanout spice mix and allspice are added for a Middle Eastern touch, along with a spray of mint.

    Instant Pot White Bean Soup Recipe with Tomatoes

    Prep time: 15 minutes    Cook time: 30 minutes    Total time: 60 minutes

    Make it faster: Use canned beans instead of dried. There's no need to cook it in the Instant Pot when using canned beans.

    This vegan white bean soup recipe can be made with any dried white bean - flageolet beans, navy beans, cannellini beans (white kidney beans), or Great Northern beans. The beans are cooked with tomatoes, sage and thyme for a hearty, flavorful meal.

    Curried Mac and Cheese with Cauliflower

    Prep time: 35 minutes    Cook time: 20 minutes    Total time: 55 minutes

    Make ahead friendly: Make the entire dish and either cover and store in the refrigerator or bake it and store in the refrigerator. Finish in the oven with the breadcrumbs.

    Cheesy curried cauliflower mac and cheese with penne pasta, melty cheese, kale and red chiles. This makes for an incredibly comforting vegetarian dinner, perfect for cold nights, and it's all topped with toasted breadcrumbs.

    D E S S E R T

    Yogurt Cake with Pears

    Prep time: 30 minutes    Cook time: 60 minutes    Total time: 90 minutes

    Make ahead friendly: This is excellent the next day for breakfast, brunch, or an afternoon snacking cake.

    Tender and moist yogurt cake dotted with pears, cranberries and chocolate chips. Perfect for dessert, brunch, or as an afternoon snacking cake with a cup of tea.

      I would like to change from eating chicken and fish to all vegetarian diet. I have used Half Baked Harvest for several years , but she tends to be heavy meat and cheese. I need tasty recipes to keep us on the vegetarian path.

        Welcome to my blog! I have almost entirely vegetarian dishes here and many are vegan. I also have meal plans under the tab labeled meal plans. And I have general tips and info for anyone considering this switch in their diet. You can find that under the 101 tab. Enjoy the journey and don’t expect to switch overnight. That’s a tough way to do it.
