    Vegetarian Meal Plan: March - Week 1

    Here's a vegetarian meal plan for the upcoming week, full of easy weeknight dinners, and a weekend breakfast. The menu includes stuffed peppers, tacos, avocado toast with a chickpea salad, and weekend pancakes!

    MEAL PLAN

    MONDAY:  Jambalaya Stuffed Peppers Casserole

    TUESDAY:   Cuban Black Bean and Sweet Potato Tacos with Candied Plantains

    WEDNESDAY:   Curried Mac and Cheese with Cauliflower

    THURSDAY:   Chickpea Salad Avocado Toast

    FRIDAY:  Creamy Spinach Spaghetti Squash Casserole

    WEEKEND:  Vegetarian Enchiladas

    WEEKEND BREAKFAST: Blackberry Cornmeal Pancakes

    M O N D A Y

    Red peppers stuffed with a jambalaya mixture of rice, beans, cornbread and spices, and topped with cheese and cornbread.

    Jambalaya Stuffed Pepper Casserole

    These vegetarian jambalaya stuffed peppers can be made in a flash with Zatarain's Jambalaya Mix, and then scooped into red peppers ready for roasting. They're all topped off with cornbread and cheddar cheese for a family-friendy dinner.

    Side dish suggestions: Serve with the rest of the cornbread on the side or make a fresh batch of Jiffy Mexican cornbread. This corn casserole that bakes up like a souffle is a great side dish with this meal too.


    T U E S D A Y            

    Soft tacos filled with black beans, sweet potatoes, cabbage and cheese. Candied plantains are on the side.

    Cuban Black Bean and Sweet Potato Tacos with Candied Plantains

    Tuesday Taco Night! Cuban spiced black bean and sweet potato tacos with cabbage - topped with a salsa verde and cheese.

    Side dish suggestion: Candied plantains are served on the side (recipe included)!


    W E D N E S D A Y

    A casserole dish filled with cheesy curried mac and cheese with cauliflower, and topped with breadcrumbs.

    Curried Mac and Cheese with Cauliflower

    Cheesy curried cauliflower mac and cheese with penne pasta, melty cheese, kale (or spinach), and red chiles. This makes for an incredibly comforting vegetarian dinner, perfect for cold nights, and it's all topped with toasted breadcrumbs or crispy quinoa.

    Side dish suggestion: Keep it simple with air-fryer baby bell peppers.


    T H U R S D A Y 

    Chickpea salad spread on on toast and topped with avocado slices, olive oil and seasoned salt.

    Chickpea Salad Avocado Toast

    This deliciously healthy chickpea spread for avocado toasts is mixed with garlic, onions, lemon and mayonnaise and topped with slices of avocado for a new version of avocado toast. And it's all ready in 20 minutes or less.

    Side dish suggestion: This is a light dinner, and I serve it with a simple green salad with a lemony vinaigrette.


    F R I D A Y

    Creamy Spinach Spaghetti Squash Casserole

    This easy, creamy, cheesy spaghetti squash casserole is full of comfort and is a perfect vegetarian dinner for a family dinner, or as a side dish for steak or chicken. There are three kinds of cheese, peppers, onion and a big helping of spinach tucked into this delicious casserole.

    Side dish suggestion: Air fryer asparagus or artichokes are both great choices. When I serve this casserole I use this stuffed artichoke recipe, but don't stuff it.

    Vegetarian Enchiladas

    These vegetarian enchiladas are filled with two kinds of beans for protein, veggies, spices and cheese. They're topped with salsa and cheese just before going into the oven.

    Side dish suggestions: Corn casserole, Mexican cornbread, Sweet Corn Tomalito, Mexican black beans, or if your store has them, blistered shishito peppers all go great with this dish.


    W E E K E N D    B R E A K F A S T

    Blackberry Cornmeal Pancakes

    Fluffy buttermilk pancakes made with corn flour and all-purpose flour, and loaded with blackberries for a special breakfast. The pancakes are sweetened with honey and a little apple sauce.
