    Vegetarian Meal Plan: February - Week 1

    Here's a vegetarian meal plan for the upcoming week, full of easy weeknight dinners, a weekend dinner that's perfect for a dinner party, and an appetizer for a crowd.

    Planning Notes

    Most of the dinners for this week's meal plan require very little prep - 15 minutes or less. And several can be made ahead, or at least partly ahead.

    MEAL PLAN

    MONDAY:  30-Minute Skillet Enchiladas 

    TUESDAY:   White Bean Soup with Cauliflower

    WEDNESDAY:   Mac 'n Cheese Impossible Pie

    THURSDAY:   Broccoli Cheddar Casserole

    FRIDAY:  Instant Pot Tuscan Bean Soup

    WEEKEND:  Cauliflower Steaks over Warm Lentil Salad

    WEEKEND GAME APPETIZER: Texas Trash Dip (Warm Bean Dip)

    M O N D A Y

    30-MINUTE DISH         ONE-PAN DISH        VERY LITTLE PREP REQUIRED

    30-Minute Skillet Enchiladas

    These skillet enchiladas are ready in around 30 minutes and can be made with any kind of tortilla. But I made mine with tortillas that are only 2 grams of carbs that I order online. Information about them is in the post.


    T U E S D A Y

    EASILY MADE VEGAN        HEARTY ENOUGH FOR DINNER

    White Bean Soup with Cauliflower

    This white bean cauliflower soup is loaded with cauliflower, leeks, and celery, and adds a little kick from jalapeño pepper. You won't need any fancy ingredients, and like most soups, you can make it ahead. Make a double batch to have soup for lunch at home or at your desk at work.

    EASY        ONLY 15 MINUTES OF PREP

    Mac 'n Cheese Impossible Pie

    Impossible Pies were all the rage in the '70's. They're so easy, and this recipe allows you to make macaroni and cheese without cooking the pasta separately. Impossibly, so it seems, it forms its own crust while it bakes. This will be a family favorite. I promise.


    T H U R S D A Y 

    EASY        GLUTEN FREE

    Broccoli Cheddar Casserole with Quinoa

    This broccoli quinoa casserole is a healthier version of the Broccoli Cheddar Casserole I grew up with. It eliminates the cream soup and Ritz crackers. And for added protein for a vegetarian main dish, it includes quinoa.

    If you're not a fan of quinoa, add silken tofu to the sauce instead.


    F R I D A Y

    GLUTEN-FREE         NEEDS ONLY 15 MINUTES PREP

    Instant Pot Tuscan Bean Soup

    This Tuscan white bean soup can be made with any dried white bean, although I typically use flageolet beans. Flageolet beans are the caviar of white beans and are almost always my choice.

    PARTLY MAKE AHEAD         30-MINUTE DINNER

    This dinner answers the question of what to serve with cauliflower steaks. It can be entirely made ahead, except for the cauliflower steaks, making this a perfect weeknight dinner or for a dinner party. The super-easy dressing comes together in minutes and is very flexible on many vegetable dishes. And the warm lentil salad is also great on its own.

    Football is happening this weekend! And this Texas Trash Bean Dip is a classic cheesy, warm bean dip of refried beans loaded up with sour cream, cream cheese, and taco seasoning and topped with ooey-gooey cheese. Perfect for a day of football with family and friends.
