    Vegetarian Meal Plan (Autumn) - #18

    From the time I was a child, September has always meant a new start. It was the start of the school year, with new notebooks, new books, new teachers, and a fresh new slate to build on. I'm still that way.

    And I'm starting off with a meal plan for the week ahead. As always, some are from my blog - old favorites I haven't made in awhile - and one is brand new to me from a website that caught my eye this week!

    Additionally, my meal plans always have a lot to do with what's in my refrigerator and pantry that I'd like to use up this week.

    MEAL PLAN

    MONDAY:   Spiralized Sweet Potatoes and Apples with Dates (easily made Vegan)

    TUESDAY:   Broccoli Casserole with Cheese and Quinoa

    WEDNESDAY:   Truffled Mushroom White Baked Ziti

    THURSDAY:   Ginger - Carrot Soup (Vegan)

    FRIDAY:  Cheesy Mexican Stuffed Sweet Potatoes

    M O N D A Y

    Spiralized Sweet Potatoes and Apples with Dates

    EASILY MADE VEGAN   DAIRY-FREE GLUTEN-FREE   MEDIUM DIFFICULTY 30(ISH)-MINUTE MEAL    

    Prep Tips 

    If you don't have a spiralizer, many markets now sell pre-spiralized sweet potatoes in the refrigerator cases in the produce department.

    Make it a Meal

    Hemp hearts add great protein to this dish. The 2 tablespoons called for in the recipe equates to a little more than 6 grams of protein, and is a complete protein. This means it offers all the amino acids our bodies require. So for me, I need only a salad dressed with this Pear Vinaigrette.

    Omnivore Tip: Serve with pork chops for the omnivores.

    Broccoli Casserole with Cheese and Quinoa

    EASY GLUTEN-FREE

    Prep Tips

    Make the quinoa and breadcrumb topping ahead of time.

    Make it a Meal

    Sauté some slices of tomatoes with a little butter, garlic, salt and pepper. Both cooked tomatoes and cooked broccoli have excellent antioxidant properties by themselves. But when combined, they have even more potent health benefits.

    Omnivore Tip: Serve this with roast chicken for the meat-eaters at the table.


    W E D N E S D A Y

    Truffled Mushroom White Baked Ziti

    EASY       

    Prep Tips

    Assemble this entire dish ahead if you want. Amanda, the author of Burrata and Bubbles, recommends the following:

    "To prepare this mushroom baked pasta ahead of time, we make the recipe as you would on the stove, pour into our baking dish, sprinkle with our topping, cover tightly and refrigerate. We take the pasta out of the refrigerator an hour before baking to bring the pasta down in temperature as well as ensure our dish doesn't crack when it hits the hot oven."

    Omnivore Tip: Serve with steaks or for a truly decadent meal, with broiled / grilled lobster tails.

    Ginger - Carrot Soup

    GLUTEN-FREE            VEGAN         EASY              

    Prep Tips

    I have a load of sweet potatoes on hand, so I plan to substitute that for the white potatoes in the recipe.

    I use one of those powerful blenders to make this, a Ninja, since I can puree the soup all in one go instead of in batches.

    Make it a Meal

    A grilled cheese sandwich and a salad would round the meal out if you want a heavier dinner. But sometimes, I just like to have soup with an arepa.

    Omnivore Tip: Any kind of meat will go well with this soup as a side dish. Bacon wrapped pork chops is probably what my maximus carnivore husband would like.

    Cheesy Mexican Stuffed Sweet Potatoes

    GLUTEN FREE

    Prep Tips

    If you don't want to take the time to cook up a batch of black beans in the Instant Pot, feel free to use canned.

    Use other melty cheeses that you might have on hand, such as Monterey Jack.

    This is a very flexible recipe that allows you full freedom to use the toppings you prefer. And if you want to simplify the sour cream topping, just use it plain, omitting the chipotle peppers in adobo.

    Make it a Meal

    If you have some fresh corn at your markets, it would be the perfect side for this hearty stuffed sweet potato.

    Omnivore Tip: Add chorizo or bacon lardons to the stuffed potato.
