These are my 6 favorite chocolate desserts on The Wimpy Vegetarian, most of which come together in minutes and just need chill time. They include chocolate bark, frozen mudslides, chocolate sorbet and truffles.

Chocolate is my favorite response to stress.

Late to work? Grab a chocolate croissant.

Heavy traffic getting home and my new puppy toilet-papered the house? Chocolate truffles.

Power cut off because I forgot to pay the bill? Reach for chocolate brownies.

If chocolate is your go-to when life hurls surprises at you, then you need these 6 favorite chocolate recipes. Stat!

Fluffy Chocolate Mousse Recipe (No Raw Eggs!)

One ramekin filled with chocolate mousse, with a spoon.

This chocolate mousse is made fluffy by using the food processor to make it. It whips enough air into the mousse without the assist from egg whites. This means no raw eggs in your chocolate mousse.

Chocolate and Pretzel Bark with Sea Salt

Pieces of Chocolate and Pretzel Bark with Sea Salt stacked on a plate.

This Chocolate Bark with Pretzels takes 20 minutes to make, mostly spent melting the chocolate, and 30 minutes to set up in the refrigerator. If you don't want pretzels, break down peppermint sticks into crumbly pieces and use them instead.

    Chocolately Chocolate Brownie

Two chocolate brownies stacked on a plate, with a ribbon tied around them.

These are hands down the best chocolately brownies. The recipe is based on one from the Queen of Chocolate, Alice Medrich, who I was lucky enough to have as a teacher when I was in culinary school.

    #3. Peanut Butter Fudge

This fabulous little recipe comes by way of my step-daughter. All you need is peanut butter, coconut oil, coconut nectar (or honey), vanilla extract and unsweetened chocolate. Oh, and a little sea salt for a finishing flourish. Melt it all together and refrigerate for at least a couple of hours before devouring.

#4. Chocolate Coconut Truffles with Jam

    Go here for the recipe.

Chocolate truffles with jam and dusted with chocolate powder in small red and pink colored paper cups.

Truffles are a little trickier to make, and this post includes tips I learned from Alice Medrich of chocolate fame in culinary school. The beauty of them, literally, is that they're dusted with cocoa powder at the end, which can cover imperfections of the truffles.

    #5. Frozen Mudslide

    Go here for the recipe.

Frozen mudslides in fancy glasses on a tray.

Frozen Mudslides double as a drink or dessert, depending on whether you stir in the ice cream or just pour the Bailey's, Kahlua and vodka over the scoops and serve affogato-style. Either way, this dessert / cocktail takes about 5 minutes to make!

And there you have it. An amazing give-away and some chocolate to start you off on your week. I'll be back on Wednesday with a recipe for Chocolate Chip Cookie Bars!
