    Frozen Mudslide Cocktail (or Dessert)

    Frozen Mudslide dessert or cocktail

    This frozen mudslide cocktail is easy to make with a couple scoops of ice cream and equal parts of Kahlua, Bailey's Irish Cream, and vodka. And it's a two-fer since it can be either a creamy cocktail or boozy dessert.

    Cocktail desserts are cocktails that can also be served as a dessert. And vice versa. This is often a cocktail that includes some ice cream or dessert. Some lean more in the direction of a cocktail, like a sgroppino (an Italian cocktail), where the lemon sorbet is whisked into vodka and Prosecco to create a Prosecco slushie. Others are like this frozen mudslide recipe, which is more like an adult milkshake.

    In fact, there are a couple different ways to serve this cocktail. Either affogato style, as pictured, or as a blended milkshake.

    • Super easy - whether you serve this as a milkshake, on the rocks or affogato style, it only has 4 main ingredients and can be whipped up in minutes.
    • Chocolate and coffee combo- they are ideal dancing partners in this cocktail. You can use any coffee liqueur, but I always choose Kahlua, and add a scoop of chocolate ice cream to the mix.
    • Perfect for special occasions - whether it's St. Patrick's or Valentine's Day, this is a perfect cocktail to serve.

    ๐Ÿง… Main Ingredients + Notes

    The secret to faster and easier meals often lies in the ingredients. For example, store-bought items and ingredients you make ahead and store in the refrigerator (or freezer) can turn a 60-minute recipe into a 30-minutes meal or less.

    Affogato Style

    • Ice cream - I use a combination of chocolate and vanilla.
    • Kahlua - or other coffee liqueur you may prefer.
    • Bailey's Irish Cream liqueur - or your favorite brand of Irish Cream.
    • Vodka - Either plain or vanilla flavored (which is amazing in this recipe).
    • Whipped cream - optional
    • Chocolate shavings - for garnish.

    Milkshake Style

    This style, which is more common, has all of the above ingredients, but includes ice cubes to make it into a milkshake.

    • Countertop Blender (one that crushes ice cubes easily)

    Detailed instructions for making this frozen mudslide recipe in both an affogato and milkshake style are in the recipe card below, but here's an overview!

    Step 1

    Affogato style. Partially melt the ice cream in the microwave oven. Dish into individual glasses. Mix together the Kahlua, Bailey's and vodka, and pour over the ice cream. Gentle stir and top with chocolate shavings and optional whipped cream.

    Step 2

    Milkshake style. Combine 1 cup of ice cubes with the ice cream, Kahlua, Bailey's and vodka in a blender. Whirl like crazy until smooth. Drizzle chocolate syrup down the sides of a glass. Pour in the milkshake and top with chocolate shavings and optional whipped cream.

    If I serve this as a boozy dessert, I sit the ice cream out for 20 minutes on the counter to soften, or microwave for 15 seconds, and put a couple big scoops in a glass. Mix the Kahlua, Bailey's and vodka ahead of time so it's ready to go.

    ๐Ÿ’กIdeas for Possible Variations

    Have some fun with the ice cream. Mix it up with coconut ice creams, gelato or an ice cream that has chocolate chips mixed in.

    For St. Patrick's Day, use mint ice cream with chocolate chips!

    More Boozy Desserts and Slushies

    Another frozen treat that can be either a cocktail or dessert is a sgroppino. Think of it as a Prosecco slushie. They're very popular in Northern Italy, and need only 3 ingredients: Prosecco, lemon sorbet and a little vodka.

    Stir them all together, freeze and celebrate.

    Or if it's cold outside, make yourself an adult Hot Chocolate with Bailey's. It's topped with whipped coconut milk, but you can totally make whipped cream instead.

    This easy Bailey's Mousse is a great boozy dessert that's like a fluffy chocolate dessert with a whisper of a cocktail.

    Affogato Style

    • 8 scoops vanilla and chocolate ice cream depending on the size of your glasses
    • 2 ounces Kahlua
    • 2 ounces Bailey's
    • 2 ounces vodka
    • Whipped cream optional
    • Chocolate shavings for garnish
    • 4 small mint sprigs for garnish

    Milkshake Style

    • 1 cup ice cubes
    • 2 tablespoons chocolate syrup optional

    Instructions

    Affogato Style

    • Partially melt the ice cream in the microwave oven for 15 seconds on high, or on the countertop for 20 minutes. Divide between 4 glasses.
    • Mix together the Kahlua, Bailey's and vodka, and pour over the ice cream. Gently stir.ย 
    • Add a little whipped cream, if desired, and garnish with chocolate shavings and mint.

    Milkshake Style

    • Pile the ice cubes, ice cream, Kahlua, Bailey's and vodka into a blender. Whirl like crazy until smooth.
    • Squirt a little chocolate syrup around the inside of the glasses, and pour in the milkshake. Add whipped cream, if desired, and garnish with chocolate shavings.

      I have been thinking about moving to sea level too. The altitude isn't doing my any favors. But it will have to wait until the kid finishes college. Until then this should tide me over and nicely too!
