    Corn

    Corn is at its freshest and very best in summer months and can be used in so many ways. Use it in salads, frittatas, and add to pasta made with zucchini noodles, or tacos. The possibilities are almost endless.

    A big reader favorite is this Cheesy Mexican Quinoa Casserole that the folks at Parade Magazine liked so much, they published it in their magazine. And one of my favorites is this Mexican Street Corn Casserole.
