    BREADS, PIZZA AND SAVORY TARTS

    These breads, pizza and savory tarts are perfect for weekend baking.

    Baking yeasted breads may be the most meditation-like thing you can do in the kitchen.

    First, there's the magic of baking up something so light and delicious by using only a few ingredients.

    But kneading yeasted bread dough from something raggedy into a soft, pliable, silky mound is calming. The rhythmic motions. Moving the dough around a work space. Watching how its elasticity changes over the space of a few minutes. I can feel tension seep out of me almost immediately.
