    I am so excited to announce my cookbook will be released July 31, just a little more than 1 month from now!!!!  Woo-hoo!!!! And is this a gorgeous cover, or what??!!

    And did I tell you? Amanda Hesser and Merrill Stubbs, co-founders of Food52, were kind enough to write the Foreward. HUGE BIG DEAL, you guys!! I was an early part of the Food52 community, won a bunch of their recipe contests, and have recipes published in a few of their cookbooks.

    This book is truly for everyone, whether you're considering a vegetarian diet and want to ease into it, or if you're already vegetarian. Additionally, if you'd like to prepare more vegetarian dishes, but some members of your family are resisting, many recipes include tips for adding fish and meat. At the other end of the eating spectrum, some recipes are vegan, and many others offer tips for making them vegan.

    A little information about the book.

    It's filled with over 120 fuss-free mostly-dinner recipes that aren't just filling and delicious (some of them are now my all-time favorites, guys), they're also simple! You shouldn't have to traipse around to 3 or 4 different stores to find an ingredient you're not sure how to pronounce. And it shouldn't have to be a major project that uses every pot and pan you own. In fact, the publisher and I were so committed to this theme, we grouped the recipes into chapters of cooking ease.     The Simply Vegetarian Cookbook - Fuss-Free Recipes Everyone Will Love

    The first chapter sets the stage with great information for anyone considering a vegetarian or semi-vegetarian diet. The remaining chapters are probably self-explanatory by their titles, but let me fill you in just a little.

    Chapter 2: No Cook shares recipes that don't require you to cook a thing. Some may include ingredients such as a can of beans, but you personally won't have to cook anything. I promise.

    Chapter 3: Thirty Minutes Max includes recipes that can be prepared from start to finish in 30 minutes or less. And don't forget, people, these are mostly dinners!

    Chapter 4: Five Ingredients is all about dishes with, duh, 5 ingredients or less. Water, oil, butter, salt and pepper don't count, by the way. I figure you have those on hand. You will be amazed at how many lunches and dinners you can make with so few ingredients.

    Chapter 5: One Pot & Skillet. Guaranteed fuss-free clean up since you can make these dishes in one pot or skillet. My husband, Carnivorous Maximus (aka VIP dish washer), LOVED this chapter when I was working on it.

    Chapter 6: Sheet Pan & Baking Dish has both recipes for dinners that can be completely prepared using a sheet pan, as well as a bunch of comfort casseroles that can be served for breakfast (think egg bakes!) or dinner.

    Chapter 7: Slow Cooker & Pressure Cooker is appliance-centric. Almost all the recipes in this chapter include directions on making them in either a slow cooker while you're at work during the day, or a pressure cooker for a super-quick dinner when you get home. I love my Instant Pot, and full confession, that's the pressure cooker I used.

    Chapter 8: Kitchen Staples is a collection of recipes for sauces and other ingredients I like to have on hand to add a little extra oomph to dishes.
