    15 Cozy Vegetarian Soups Perfect for Fall

    Fall chilly days and evenings call for soup. They warm us up and are a great way to add more vegetables to our and our family's diets.

    If you want to add more protein to soups, think nutritional yeast, hemp hearts, and tofu. Or make them your own with other herbs and spices you prefer. Because one of the beauties of soup is how flexible they are.

    #1. Curried Butternut Squash Soup

    This vegan curried butternut squash soup is so flavorful thanks to roasting the butternut squash instead of simmering it in broth. A sweet potato is added for a super-silky smooth texture, along with a little coconut milk.

    The post includes instructions for an easy way to cut and peel butternut squash.


    #2. White Bean Soup with Cauliflower

    This hearty white bean and cauliflower soup is loaded with cauliflower, leeks, and adds a little kick from jalapeño pepper. It's perfect for lunch, and filling enough for a vegetarian dinner.

    #5. Award Winning Vegetarian White Bean and Vegetable Soup

    This recipe won first place in a national Whole Foods contest!! This white bean vegetable soup is loaded with vegetables and is hearty enough to stand on its own as a main dinner dish with only a crust of bread on the side.

    There's a bit of prep work to this soup, but I've included shortcuts in the post for you.

    #6. Instant Pot Curried Lentil Soup

    This easy curried lentil soup is made in the Instant Pot with red lentils, red curry paste, curry powder, ginger and garlic. The recipe is based on an Ottolenghi recipe on Epicurious that I fell in love with.

    #7. Tuscan White Bean Soup with Tomatoes

    This white bean soup recipe can be made with any white bean - Flageolet, Navy, cannellini or Great Northern beans. The beans are simmered with tomatoes, sage and thyme for a hearty, flavorful meal. The instructions are for both the stove top and Instant Pot.

    #8. Easy Vegan Coconut Curried Butternut Squash Soup

    This comforting potato leek soup includes Hatch chiles, but poblano or Anaheim chiles work well too.
